Why Three-Dimensional Cutting Produces a Better Cube
In a 2D dicer, raw material passes through two sequential cutting axes — longitudinal slices, then transverse cuts — and relies on block feed pressure to produce the third dimension. The tissue at the cut edges is already under compressive stress from the first cut when the second blade contacts it. That compression is what causes torn edges in 2D diced product and what reduces dicing yield at smaller cube sizes: compressed tissue fragments rather than cuts cleanly, producing fines that fall below the target specification.
The YQQD-350 uses three independent blade groups, each cutting one axis without relying on compressive force from the previous stage. The three-part system operates in a coordinated sequence that minimises load at each cutting stage, producing cleaner cube edge geometry, less fines generation, and the 80–85% dicing yield at 5 mm cube specification that the machine consistently delivers.
The -5°C to -10°C operating temperature represents the optimal window for this cutting approach: the material is firm enough to hold its geometry through all three cutting stages without deforming under blade pressure, but not hard-frozen to the point where blade wear and motor load increase significantly. Operations running a tempering or partial thaw step can feed the YQQD-350 directly from temper, eliminating the holding step that conventional frozen dicers require.

Three-Part Independent Blade System
Each cutting axis has its own dedicated blade group operating independently. This eliminates the compressive carry-over between axes that causes edge damage in conventional 2D dicers. The practical result is cleaner cube edges and higher yield at small cube sizes where compression damage is most significant.
Cantilever Quick-Release Blade Mounting
The cantilever blade design allows each axis’s blade group to be removed and replaced individually without dismantling adjacent sets. A full blade change across all three axes takes under fifteen minutes — a meaningful operational difference from designs where blade access requires significant disassembly.
Direct Washdown Stainless Construction
The cutting area is fully enclosed in stainless steel with no dead corners or recesses. Daily HACCP washdown is a direct-hose procedure with no disassembly. The machine passes food-safety audits as-installed without modification or supplementary guarding.
